On Tuesday night with our Chow Mein Hotdish we added Yummy Baked Carrots. This recipe is just that, yummy!! It is not going to win for the lowest in calories but I promise it is worth it.
Yummy Baked Carrots
1 1/2 lbs carrots thinly sliced
1/2 cup minced onion fresh or 2 tsp dried, depending on your liking of onion flavor
6 oz shredded cheddar cheese
1 cup cracker crumbs
1/2 cup butter melted
salt & pepper to taste
Slice your carrots and steam/cook until tender.
Grease a 2-3 quart casserole dish.
Combine onion, cheese, and cracker crumbs.
Place 1/2 carrots into casserole dish. Top with 1/2 mixture. Add salt and pepper. Repeat the layers one more time.
Pour melted butter over entire dish.
Bake at 375 for 15 minutes or until cheese is melted.
